1. SOON LI YONG TAU FOO

No stranger to those who love their suppers, Soon Li Yong Tau Foo is so popular that it can afford to open for just a brief period in the small hours of the morning. Officially, the stall operates between 10pm and 2.30am, but be prepared for it to change, as it can sometimes open only at 12am, or not at all. Its offerings are certainly worth the midnight drive. There is an uncommonly wide selection of ingredients for you to choose from, but you’ll want to pick the ever-popular pork belly, or the cuttlefish or squid, which go well with the ikan bilis-based soup.

2. BAI LI XIANG ECONOMIC BEE HOON

Known affectionately among west-siders as Ah Lian Bee Hoon, this stall serves up fried comfort food like no other. A must-try, of course, is its bee hoon, but if that’s not your thing, you can ask for kway teow or Maggi noodles. You’ll also be able to choose from a variety of sides, including fried chicken wings, sausages, spam and fish cakes, to complement the noodles. A heads-up for first-timers: Be prepared to wait in a long line, which can start as early as 10pm.

3. CHAN BBQ SAMBAL STINGRAY

The secret to Chan BBQ’s excellent stingrays is apparently its sambal chilli sauce. Nutty and sweet yet intensely fiery, it perfectly complements the fresh and thickly cut stingray, which is just nicely charred enough for the meat within to be juicy and flavourful. It is no wonder this stall is quite the institution among those living in the east.

4. G7 SIN MA CLAYPOT LIVE FROG

Cheong Chin Nam Road famously comes alive in the evenings as the food outlets that line the stretch of road open their doors to diners from the neighbourhood and its surrounds. So it’s no mean feat that G7 Sin Ma Claypot Live Frog is always filled with patrons. The star of the menu is clearly its frog leg, which is tender and succulent and goes well whether ordered with dry chilli or ginger spring onion sauce. The porridge also has a nice consistency – smooth and thick with just the right amount of starchy.

5. D’RUBINAH RESTAURANT THAI MUSLIM & SEAFOOD

For many, supper is not supper without roti prata. D’Rubinah Restaurant’s take on this local favourite is fluffy, light and full of flavour, while its curry packs a punch with just the right amount of spice. Another must-try is its chicken tikka, which is lightly spiced and goes perfectly with its mint chutney and some of its buttery naan.

For some truly unique bee hoon, Tang Tea House’s pan-fried rendition is one you won’t want to miss. The restaurant’s take on this Singaporean dish is light and crispy, with the noodles gently fried together such that they come together to form a noodle pancake of sorts. Also, don’t miss the dim sum here – its molten salted egg custard buns are tart and piquant, while the carrot cake is dense and savoury without being too starchy.
